Production:
Our cacao is sourced from a group farmers located in the Amazon region of Peru, where organic and sustainable practices that protect the purity and quality of the finest Theobroma cacao, or “Chuncho” as it’s called locally, in its native environment.
The single origin Criollo beans are harvested from inside the cacao fruit, which also contains a white pulp (said to be super sweet to eat!). After separating the beans from the pulp, they undergo a fermentation process lasting 6-7 days, before being sun-dried for 3-4 days and then going through a specialised cleaning process.
Once dried, the beans are cracked open to obtain cacao nibs. These nibs are ground to produce cacao paste (the product that you receive inside our SOEL Cacao Bags), retaining all the rich nutrients and aromatic qualities of the Theobroma cacao – truly the Food of the Gods.
Why do we sell our Cacao unshaved or not in powder form?
The reason for this is to protect it’s purity, and to ensure the Cacao goes through as minimal processing as possible (overheating can destroy some of it’s nutrients!), so that you receive a product that is true from Amazon to you.
But also because one of the most important components to creating your own cup of Ceremonial cacao, is this very process of preparation. Knowing that everything is energy, how our Cacao is prepared and the intention we hold as we do so, will create the foundations of what you will unlock with each cup. This is why we allow this final moment of preparation to be yours. To be your intention, your energy, your medicine.
